Day 21 - A recipe
Take a toddler, a white couch, and a box of strawberry jello...no, wait...that's a recipe for disaster.
How about lemon balsamic chicken instead? All you need is chicken thighs, poultry seasoning, a couple of lemons, and balsamic vinegar.
Trim the fat of the thighs. It's gross. If you have time and some pent up agression, pound the thighs a bit. I have a little flowered hammer I use. Technically it's for hanging pictures, but it works really well for pounding other stuff. I'm assuming here that you know to cover the chicken first with plastic wrap. Which could be a bad assumption, but you would have figured it out pretty quick on your own.
Salt and pepper the chicken and sprinkle with poultry seasoning. I use a lot. In a skillet, heat a little oil (I like olive) and maybe a bit of butter. Cook the thighs in the oil. It only takes a few minutes per side. I brown them a bit. Then dump in some balsamic vinegar, enough to at least cover the bottom of the pan. Squeeze in the lemons. If you're me, spend the next few minutes picking out the seeds that fell into the pan.
Bring to a boil, then simmer until the balsamic vinegar reduces. Turn the chicken at least once to coat evenly. This is especially good with risotto, but any side will do.
